Champagne Les Frères Mignon

In 2015, brothers Florent and Julien took over the multi-generation family winery in Cramant, located on the Côtes des Blancs and classified as a Grand Cru village, renowned for its chalky soil and favorable climate, perfect for producing high-quality Chardonnay grapes. This began an exciting adventure, as they also assumed responsibility for the vineyards, including Grand Cru of Avize, and outstanding vineyards in Cuis, Cumières, and Cramant. The grapes from all vineyards had previously been sold to the big champagne houses. With the enthusiastic support of their father, the two young winemakers, then aged 24 and 28, established their own winery in a short period.

With a focus on sustainable, organic vineyard practices and traditional methods paired with modern techniques, Les Frères Mignon creates champagnes that reflect the unique terroir of Cramant. The winery hand-harvests its grapes, ensuring that only the best fruit is selected for its cuvées.

Sustainable and Organic Vineyard Practices

Julien Mignon is committed to eco-friendly practices in the vineyard,  prioritizing organic farming methods, minimize their carbon footprint, and emphasize biodiversity within their vineyards. This dedication enhances the quality of their wines and contributes to the preservation of the local environment.

As of 2022, 90% of their vines are planted with Chardonnay in the Avize, Cramant, and Cuis communes, while the remaining 10% are Pinot Noir in Cumières.

Non-intervention Winemaking

With a similar philosophy, Florent concentrates on the work in the cellar, minimizing interventions to respect the quality of the raw material, allowing natural processes to flourish. Sulfur use is also kept to a minimum.

After meticulous sorting and pressing the extracted juice is carefully transferred into 255 and 600-liter French oak barrels. In the barrels, spontaneous fermentation begins, fueled by indigenous yeasts that naturally reside on the grape skins. This fermentation process allows a more authentic expression of the vineyard’s terroir. The wines undergo a maturation period of approximately one year in the barrels, during which they develop complex flavors and aromas before being bottled without any filtration or clarification to maintain their purity. Subsequently, the bottled wines are set aside to mature for around two years, allowing them to refine and evolve before the final disgorgement step.
