About Antoine Bouvet

Antoine Bouvet comes from a family rooted in Mareuil-sur-Aÿ — his grandfather Guy launched the domaine in 1970, farming five hectares across three villages — Mareuil-sur-Aÿ, Bisseuil, and Avenay Val d’Or — while selling most of his fruit to Bollinger. Antoine learned from his grandfather from an early age: the joy of hard work, caring for the land, the precision of cellar work. The label on every Bouvet bottle shows the two of them — a small boy walking with his grandfather.

Antoine studied at the Viticampus in Avize and began working alongside his grandfather in 2011. He took over complete operations in 2013 — and from day one made two decisions that have defined everything since: he would work exclusively with oak, and he would convert the domaine to organic and biodynamic farming. By 2020 all five and a half hectares were farmed 100% organically and biodynamically throughout.

Every wine Antoine makes is fermented and aged in old oak barrels — some for four years or more before release. No stainless steel. No additions. Indigenous yeasts, zero or low dosage, manual disgorgement, every bottle hand-labelled. The approach is patient and deliberate in a region where efficiency and volume are the norm.

The range spans six cuvées across the three villages — Les Monts de la Vallée Blanc de Noirs and Rosé, the 2022 Avenay Val d’Or Blanc de Blancs from Les Plantels (vines planted 1964), the Saignée de Bisseuil from Les Pautes (vines planted 1964), and three new cuvées arriving for the first time in December 2026: Les Fleurs du Silence — a solera drawing from harvests spanning 2015 to 2022, the Saignée de Mareuil 2019 Millésime Brut from two plots planted in 1968, and the Bisseuil Magnum blending Chardonnay and Pinot Noir from Les Rocheforts (1958) and Les Pautes (1964).
