Description

En L’Ebaupin is a small vineyard above and west of Saint-Aubin, where the slope turns south-west and tucks toward the Hautes-Côtes. It ripens late, and the vines are old. Fruit from the top is more mineral and acid-driven, and the grapes lower down give a richer, riper character.

The grapes are hand-picked and foot-crushed, then pressed for four hours without sulfur and left to brown in tank. The juice is racked, with the best of the solids, into barrels and ferments with indigenous yeasts, with no sulfur or nutrients added. The wine ages ten months on full lees, unstirred, is lightly sulfured in spring, and is bottled unfined and lightly filtered. 1,309 bottles were made.

The result shows classic Saint-Aubin aromatics, flavors, and verve.
