Blanc de Noirs is white Champagne made from red grapes — pressed quickly so the skins don’t color the juice. The result is fuller and rounder than a Blanc de Blancs, with more body and a richer mid-palate. For Champagne that holds its own at a dinner table, this is often the style to reach for.
Pierre Deville’s ‘Copin’ Blanc de Noirs comes from Grand Cru Verzy on the Montagne de Reims, where chalk soils and a cooler aspect give Pinot Noir unusual structure. His version uses a 12-hour skin maceration before pressing, which adds texture and a pale rose-gold tint. Hélène Charbaut’s ‘La Pirouette’ is 100% Pinot Noir from Mareuil-sur-Aÿ, planted in 1960 — a single-variety cuvée from one of the Vallée de la Marne’s most established Premier Cru villages, returning in spring 2027. Antoine Bouvet’s Les Monts de la Vallée Blanc de Noirs draws Pinot Noir from Premier Cru parcels across Mareuil-sur-Aÿ, Bisseuil, and Avenay Val d’Or — zero dosage, old oak.
