Their approach relies on organic and biodynamic apples and pears (separate bottlings) harvested from trees aged 30 to 250 years and grown locally in Champagne and Normandy. Fermentation occurs in oak barrels at their cellar in Verzy for almost a year. After that, a second fermentation in the bottle is carried out using natural sugars from the apples and pears instead of refined sugars. Finally, the cider is aged on its lees for at least 12 months before being released and sold.
