The concrete egg — an egg-shaped fermentation and ageing vessel made from concrete — is one of the winemaking tools that defines the Du Grappin approach to white wine. Unlike oak barrels the concrete egg adds no flavour to the wine — it maintains a constant temperature through the thermal mass of the concrete, keeps the wine in constant gentle movement through a natural convection current created by the egg shape, and produces wines of mineral precision and salinity that stainless steel cannot achieve in the same way. Two-thirds of the Du Grappin Vézelay Blanc is fermented and aged in concrete egg — the remaining third in old oak foudre for additional weight and texture.
