Blanc de Blancs — literally “white from whites” — is Champagne made exclusively from white grape varieties, almost always Chardonnay. Without the structure and body that Pinot Noir and Meunier contribute, Blanc de Blancs tends toward precision, mineral tension, and exceptional longevity. The finest expressions come from chalk-dominant terroirs where Chardonnay produces fruit of concentration and acidity in equal measure.
At Amitié, Hélène Charbaut’s La Crayère is 100% Chardonnay from Les Côtes and Les Rocheforts in Bisseuil — vines planted in 1963 on chalk-dominant clay-limestone soils. The Pierre Deville Copin Blanc de Blancs comes from Grand Cru Verzy — the same chalk-rich slopes that Krug sources significant fruit from. Two very different expressions of what Chardonnay does on Premier Cru and Grand Cru chalk in Champagne.
