The wine

In 1930, Les Combottes was proposed for Grand Cru classification — a recognition of what the parcel had been producing for decades. A court judgment in 1931 prevented the reclassification. The vineyard has been Premier Cru ever since. The Grand Crus it was nearly classified alongside still surround it on three sides.

Les Combottes sits at the boundary of Gevrey-Chambertin and Morey-Saint-Denis — a Premier Cru climat whose neighbours are three of the most celebrated Grand Crus in Burgundy: Latricières-Chambertin to the north, Mazoyères-Chambertin to the west, and Clos de la Roche to the south. The name comes from the combe — a narrow valley or hollow formed in the hillside — and the cold north wind that channels through this natural formation ensures a cooler microclimate than the Grand Crus nearby and a later harvest. In 2021, that natural coolness worked in the parcel’s favour.

The Amiot parcel spans three separate plots within the climat — two immediately adjacent to Grand Cru Latricières-Chambertin, one at the southern end near Clos de la Roche — totalling 0.61 hectares. Vines planted from 1936. Limestone and marl soils with gravel and red silt, east-southeast facing at 260 metres. 33% new oak for the élevage. 2,800 bottles made.

2021 vintage note

2021 was a demanding year across Burgundy — severe spring frosts reduced yields significantly in many communes. The cold north wind microclimate of the combe formation at Les Combottes, which delays harvest in warm years, proved an asset in 2021 — the parcel’s natural coolness meant the vines were less vulnerable to the frost events that hit warmer, lower-lying sites harder. Jean-Louis Amiot described the 2021 wines as showing “the best terroir transparency in several years” — classic red Burgundies with good acidity, freshness, and exceptional precision. The reduced crop load concentrated the remaining fruit. Drink 2025–2035.

The 2022 vintage is also available — a warmer, more immediately generous expression of the same parcels.

Tasting notes

Ruby to garnet. Precise aromas of red cherry, raspberry, and a mineral earthiness that reflects the limestone and marl soils. The palate is leaner and more focused than the 2022 — the vintage’s natural freshness and the combe’s cool microclimate giving exceptional clarity and mineral tension on the finish. Full-bodied with supple tannins and exceptional length. A vintage for those who appreciate Burgundy at its most precise and terroir-expressive. Decant for an hour before serving. Drink 2025–2035.
