Description
The wine
Saignée de Bisseuil comes from a single parcel — Les Pautes — in the village of Bisseuil, where 1964 Pinot Noir vines grow on chalk soils that give the wine its mineral, precise character. Bisseuil is the middle village in Antoine’s three-village holding, sitting between Mareuil-sur-Aÿ to the north and Avenay-Val-d’Or to the south. The Les Pautes parcel is one of the domaine’s oldest and most specific — 60-year-old vines producing fruit of real concentration and depth.
The saignée method — bleeding juice from the red grapes early in maceration — gives this wine its colour and its character. It’s a fundamentally different approach from the more common method of blending still red wine into the base — saignée produces a rosé with actual skin contact, real tannin structure, and a depth that blended rosé Champagnes rarely achieve. The result is a wine that sits closer to a serious rosé de gastronomie than a conventional Champagne rosé.
Antoine’s approach throughout: old oak fermentation, indigenous yeasts, no additions, zero dosage. The wine is made to express the specific character of the Les Pautes parcel and the chalk soils beneath it — not to conform to any stylistic expectation of what a rosé Champagne should taste like.
Tasting notes
Coral pink with fine persistent bubbles. Strawberry, raspberry, and rose on the nose alongside a mineral quality from the chalk soils and a hint of cream from the oak fermentation. The palate has real texture and presence — fine tannins from the skin contact give the wine a wool-felt quality that most rosé Champagnes don’t have. Fresh, precise, long finish. A rosé for the table.
