Biodynamic farming is an approach to agriculture that goes beyond organic certification — treating the farm as a self-contained ecosystem, using specific preparations made from plants, minerals, and animal manures to enhance soil health, and timing vineyard work according to a lunar calendar. It draws on the work of Rudolf Steiner and has been practised in some of Burgundy and Champagne’s finest estates for decades.

Antoine Bouvet farms all five and a half hectares biodynamically across his three Premier Cru villages — converting from 2013 and completing the transition by 2020. Hélène Charbaut follows biodynamic practices across her Premier Cru vineyards in Mareuil-sur-Aÿ and Bisseuil. Champagne Pierre Deville farms biodynamically in Grand Cru Verzy.

The discipline biodynamic farming imposes on vineyard work — close observation, precise timing, no shortcuts — tends to produce healthier vines and more expressive fruit.
