The wine

Antoine Bouvet grew up at his grandfather’s domaine in Mareuil-sur-Aÿ. The insignia on every bottle shows the two of them together — a small boy walking with his grandfather, learning the way. He took over the estate in 2013, converted entirely to organic and biodynamic farming, and works exclusively with oak. Five and a half hectares across three villages: Mareuil-sur-Aÿ, Bisseuil, and Avenay-Val-d’Or.

Les Monts de la Vallée is the flagship — the wine that brings all three villages together in a single blend. 100% Pinot Noir. The current release blends 75% of the 2023 harvest with 25% of the 2022 — disgorged 23 March 2026. Zero dosage. The wine reflects what these three villages produce together rather than what any single parcel produces alone.

Every wine Antoine makes is aged in old oak barrels — some for four years or more before release. The approach in the cellar mirrors his approach in the vineyard: precision, patience, minimal intervention. Every bottle hand-labelled.

Available in both 750ml and magnum. The magnum — 1500ml, 2022 vintage, disgorged 28 May 2025 — is part of the December 2026 allocation.
