The wine
The same three villages as the Blanc de Noirs — Mareuil-sur-Aÿ, Bisseuil, and Avenay-Val-d’Or — but with Meunier and Chardonnay alongside the Pinot Noir, and a portion of saignée rosé to give the wine its colour and additional texture. 90% of the 2023 harvest blended with 10% of the 2022 as saignée. Disgorged 23 March 2026. Zero dosage.
The saignée method — bleeding a portion of juice from the red grapes early in maceration — gives the rosé a depth and grip that the simple addition of still red wine cannot achieve. This is a rosé with real presence alongside food rather than an aperitif style. The three-village blend gives it the same complexity as the Blanc de Noirs — Pinot Noir from Mareuil-sur-Aÿ providing the structure, Meunier from Avenay adding aromatic freshness, Chardonnay giving length and precision.
As with every Antoine Bouvet wine: organic and biodynamic farming, indigenous yeasts, old oak throughout, every bottle hand-labelled.
