Old oak — barrels that have been used for multiple previous vintages — is one of the defining characteristics of the winemaking approach across the Amitié list. Unlike new oak, which imparts vanilla, toast, and spice flavours to the wine, old oak acts as a neutral vessel: it allows slow, gentle oxidation that adds texture and complexity without masking the terroir beneath.

Antoine Bouvet and Hélène Charbaut ferment and age every wine entirely in old oak — no stainless steel anywhere in their cellars. Champagne Pierre Deville does the same in Grand Cru Verzy. Domaine Amiot et Fils ages across 30–50% new oak depending on the wine — the old oak proportion giving each cuvée its texture without imposing oak flavour. Old oak is a tool for patience rather than flavour.

Amitié Wines imports small-production Burgundy and Champagne directly from the family domaines that make them. Every wine is personally selected.
