Barrel fermentation — fermenting wine in oak barrels rather than in tank — is one of the defining characteristics of the winemaking approach across the Amitié Champagne list. Unlike tank fermentation, which takes place in a temperature-controlled stainless steel vessel with no oak contact, barrel fermentation adds oxygen, texture, and a subtle oak influence while allowing slower, more complex fermentation.
Champagne Pierre Deville ferments and ages every wine in old oak barrels in Grand Cru Verzy. Antoine Bouvet does the same across his full range in Mareuil-sur-Aÿ — no stainless steel anywhere in the cellar. Hélène Charbaut ferments in 2.28hl old oak barrels throughout. Adrien Renoir ferments in old oak barriques and large oak foudres in Grand Cru Verzy. Barrel fermentation is the single most labour-intensive and most distinctive winemaking choice these producers share.
