Chardonnay is the white grape of Burgundy — the variety behind every white wine on the Côte de Beaune, from village Bourgogne Blanc through Premier Cru and the greatest whites in the world. It is also the grape behind Blanc de Blancs Champagne and appears in several of the grower Champagnes on the Amitié list.
Like Pinot Noir, Chardonnay is extraordinarily site-sensitive. Domaine Buisson-Battault’s village Meursault Vieilles Vignes from 90-year-old vines tastes fundamentally different from the same producer’s Premier Cru Poruzots grown a few hundred metres away on better-drained, stonier soils. Le Grappin’s Beaune Premier Cru Les Grèves Blanc — from one of only five producers making white wine in this celebrated climat — tastes nothing like the Du Grappin Vézelay Blanc from Kimmeridgian limestone in the northern Yonne. Same grape, completely different wine.
