The wine
Les Fleurs du Silence — the flowers of silence. The label says “chut!” — hush. It is an instruction and an invitation simultaneously. Be still. Pay attention. Something quiet and patient is in the glass.
The wine is a solera — a method borrowed from Sherry production in which a portion of the oldest wine is blended with successive younger harvests, creating a continuous blend that accumulates complexity across years rather than expressing a single vintage. Antoine’s solera draws from eight consecutive harvests: 2015, 2016, 2017, 2018, 2019, 2020, 2021, and 2022. Eight years of Avenay Val d’Or — Chardonnay, Meunier, and Pinot Noir — slowly accumulating in old oak barrels before bottling.
The solera method is unusual in Champagne. Most non-vintage Champagnes are blended from reserve wines — older vintages held in tank or barrel and added to the current year’s base wine to maintain a consistent house style. A true solera is different — the oldest wine is never fully drawn off, so every bottle contains a thread of every harvest going back to the beginning. The 2015 harvest is in this bottle. So is 2022. And everything in between.
Bottled August 2023. Disgorged March 2026. Zero dosage — the wine’s own complexity provides everything it needs. The “chut!” on the label is the sound of a finger raised to the lips. The flowers of silence, asking for your full attention.
